Rachael's Birthday Paleo Chocolate Cake
Rachael’s favorite cake for her birthday.
Cake
Oven 350°
Grease and line pan
Whisk dry ingredients:
- 3 cp almond flour
- 1 cp tapioca flour
- 1/4 cp coconut flour
- 2 cp coconut sugar
- 1 1/2 cp raw cacao powder
- 2 tsp baking soda
- 1 tsp espresso powder (or 1 shot espresso in water)
- 1 tsp salt
Mix Wet in seperate bowl:
- 4 lg eggs
- 1.5 cp full-fat coconut milk
- 1 cp water
- 1/2 cp coconut oil
- 1 tbsp apple cider vinegar
- 2 tsp vanilla extract
Pour and mix Wet into Dry.
Bake for 28-30 minutes @ 350°
Frosting
Mix on low for 30 sec
- 8 cp powdered coconut sugar
- 1 cp raw cacao powder
- 1 cp organic palm shortening
- 1/2 cp - 3/4 cp almond milk or coconut milk
- 2 tsp vanilla extract
Slowly increase the speed to high for 1 min
Adjust milk/powdered sugar for consistency
